
Sometimes you get burkes and sometimes you get real burkes - I reckon David Burke is both ! I've got no arguements with his credentials, after all he is a highly regarded New York chef who trained at the celebrated Culinary Institute of America, and soon thereafter the New Jersey native headed to France to refine his skills and take in the wonders of Michelin-starred cooking. He worked with the best, Lenotre, the pastry wizard, Georges Blanc and Pierre Troisgros - a pedigree that most young chefs would be envious of to this day. But what went wrong ?
It certainly wasn't when he became the first American, and one of the youngest chefs on record, to win France’s coveted Meilleurs Ouvriers de France Diplome d’Honneur, an award given to the chef who shows unparalleled skill and creativity with his native cuisine or when he was nominated for a James Beard Foundation Best Chef award. I reckon the rot set in when in 2003, Burke received honours as “Best Culinary Prankster” from Time Out New York because that's about the time he came up with his flavour spray idea.
